As we celebrate our bicentenary year in 2024, we are delighted to relaunch the Angostura® Global Cocktail Challenge. This marks the beginning of a new dialogue with the bartending community as we search for the next generation of champions worldwide.

Our theme for this year's challenge is... A journey through time... a celebration of 200 years of Angostura, bartending and classic cocktails.

Gather your friends and family around the table for a truly memorable meal. @mariongrasby's bold and flavourful roast chicken marinade, enhanced with ANGOSTURA® aromatic bitters, creates the perfect centrepiece for your next dinner.

INGREDIENTS
4 x Makrut Lime Leaves, ...de-stemmed
1 Lime (you’ll need the zest and the juice)
1 Lemon (you’ll need the zest and the juice)
3-4 Red Birdseye Chillies
5 Garlic Cloves
4 Coriander (Cilantro) Roots
1 tbsp Grated Ginger
4 Asian Red Shallots, roughly chopped
3 tbsp Brown Mugar
60ml (2 fl oz) ANGOSTURA® Aromatic Bitters
1 tbsp Fish Sauce
1 tbsp Sweet Dark Soy Sauce
1 tsp Sea Salt

METHOD

Combine the marinade ingredients in a food processor. Blitz until smooth.
Marinate chicken in the blended mixture overnight in the refrigerator.
Preheat oven to 190°C fan-forced (370°F). Roast chicken on a rack for 30 minutes.
Simmer leftover marinade with sugar until thickened.
Glaze chicken with the thickened mixture.
Roast for 5-10 minutes more until caramelised.

INGREDIENTS:
1 tablespoon fig preserve
2 ounces of ANGOSTURA® 7-Year-Old Rum
1/2 a lemon
3 ounces ginger beer
Fresh figs and thyme, for serving

METHOD:
Combine fig preserves, ANGOSTURA® 7-Year-Old Rum, and lemon juice in a cocktail shaker. Shake well.
