LET’S GO ANANAS! 🍍

@marys_kouzina created something tropical and refreshing yet warming with a little Christmas spice. ANGOSTURA 1919® Rum is a true Trinidadian rum that is oaky on the palate, with exotic spices, vanilla, a hint of honey, and dried fruits—perfect with pineapple! ...And to add a layer of complexity, I've used ANGOSTURA® aromatic bitters. Can’t wait for you to try this cocktail. Viva!! 🥂

For the syrup:
220g caster sugar
220ml water
220g pineapple
1 cinnamon stick
2 star anise
3-4 cloves
2 slices ginger

70ml ANGOSTURA 1919® Rum
35ml Aperol
35ml Pineapple Juice
15ml Pineapple spiced syrup
15ml lemon juice
4-6 dashes ANGOSTURA® aromatic bitters

Combine all the ingredients for the syrup in a small pot. Place on medium-high heat and boil for 20 minutes, or until the mixture thickens into a syrup. Allow to cool.

In a shaker, combine ANGOSTURA 1919® Rum, Aperol, pineapple juice, spiced pineapple syrup, lemon juice, and ANGOSTURA® aromatic bitters. Add lots of ice to the shaker and shake. Add a sphere of ice to a tumbler and pour in the cocktail. Garnish with a pineapple wedge. Enjoy.

The recipe makes one cocktail. Syrup makes enough for approximately 10 cocktails.

According to @emelia_jackson it wouldn’t be Christmas without a pavlova recipe… and we’d be inclined to agree!

A couple of dashes of ANGOSTURA® aromatic bitters added to a meringue base will take any pavlova to a new level.

INGREDIENTS:
5 egg white
1 cup caster ...sugar
2 tsp corn flour
1 tsp white vinegar
2 dashes ANGOSTURA® aromatic bitters

METHOD:
Add the egg whites to the bowl of a stand mixer and mix until frothy. Slowly add the sugar, 1/4 cup at a time until fully incorporated and then whisk for a good 5-7 minutes or until the sugar crystals are completely dissolved throughout the egg whites.

Add in the ANGOSTURA® aromatic bitters, vinegar and cornflour and give a final mix. Split the meringue between two trays and spread into two roughly 18cm rounds.

Bake at 100c for 1 hour, turn off the oven and leave to cool completely in there (can be left to cool overnight). Layer with whipped cream and the fruit of your choice!
